Company for Dinner

We had a wonderful beginning to our weekend after a hectic week of hospitals, funerals and taking kitty to the vet…what a week.

Poor Baby has been feeling dumpy and her eye is mattering and she’s sneezing and wheezing so off to the Vet we went on Thursday…and finally after the tune of $178, 2 bottles of Anti-biotic and having to get a urine sample from her (yeah, right!) we got her home. She has a cold and a virus and bladder infection. I feel so bad for her, she’s just so quiet and sweet and now she looks so sad. I don’t like it when my animals hurt…I don’t know what to do for them.

Soooo – anyway, the fun time! Doug’s cousin is here from Florida visiting her son/family and so her and two other cousins came over this afternoon and I cooked a pot roast dinner. Darlene (from Florida) has been so hungry for this so I told her I’d fix it – oh it was delicious if I say so myself!

Roasts
We went to one of our favorite markets and had them cut these two roasts fresh – total weight is 7 lbs. Don’t they look good??

Roastinpan
Just a bit of salt/pepper/bay leaves and onions and away it cooks

Pot Roast 
After the meat is done I remove it and put it in a baking dish, covered with foil, and then in a warm oven until the vegetables are done.
I use the juice from the meat, extra beef broth and 2 jars of Heinz Chicken Gravy to simmer the potatoes, carrots and onions in till tender.
When the vegies are tender I remove them and thicken the gravy

Fruit 
I knew we wouldn’t need much with the meal so I just made some fruit cups of peaches, pears and cherries. The girls brought a cake with them for dessert

I also made a Corn Bread but not from scratch. I found a most wonderful one by Marie Callenders – they used to have restaurants but I don’t think they exist anymore…but they were very famous for their Corn Bread. So try and find this product…it’s wonderful and tastes as good as homemade…very moist and sweet.

Tomorrow will be a day of relaxing and sewing on orders. I got a couple large ones so I’ll be busy for a few weeks. Doug will be going on deliveries so this gives me something to do.

  5. Karen, It's always so nice having family stop by and visit. This is a real nice picture of Doug and family..

    Your pot roast looks absolutely delish!! That is one of my favorite meals to have too!! I might have to put this one down on my list to have this coming week..

    We have a Marie Calendar's restaurant here in Oklahoma too.. Their food is sooo good!!

    I sure hope your kitty cat gets better soon.. She sure does remind me of our cat..same hair coloring and being a tabby and all..only our's is a male cat. It is hard not knowing what we can do to make them feel better..

  6. I need you to come and cook for me. We are laying a new laminate floor in our kitchen and what a job. I think we started in the hardest room.

    Pets are so special and such great companions. It is so sad to see them sick and sad for our checkbook when we get the bill.

Karen your pot roast looked delicious I could almost smell it cooking.I tried your pizza recipe Friday night and it was a huge hit so now I have to add it to the menu more often.Hope your little kitty starts to perk up.I bet people love visiting your home it is so warm feeling and the food is delicious and the conversations are probably great with many laughs and hugs.

  14. Mmmm! That is what I should make today, since it is cold and rainy here in Ohio today!
    Your poor kitty! It is worse on them because they can't tell you what hurts on them. How in the heck do you get a urine sample from a cat?Maybe it was worth the $$ just to find out! =)

  16. Poor girl, I hate to see sick pets too. Wow, that was expensive, but she needs it, so it is worth it. I hope the medicine works quickly.

  18. Aw Karen, I hate it when one of my babies are feeling under the weather. Don't worry about kitty's uring sample, a little needle takes are of the extraction. She looks very comfortable sleeping against her doll. She'll be back to herself in no time at all!

  19. that was supposed to read: a little needle takes CARE of the extraction! For the blogger who wondered, a sterile needle is inserted into the bladder and a little urine is extracted into the syringe....think *blood test*, really quite painless for them.. It's our wallet that hurts, lol.

  23. Karen, I was so excited to see you posted. I LOVE your blog. You are truely my favorite. I DID the pizza and it was a BIG hit for my Honey Ken and our sons, Steven and Matthew!!!!! I am making a family cookbook and that is going is it!! Our oldest hard to work friday night in the little store in our town, so we did the pizza yesterday and a board game!!!
    I love the way you post your reciepes, step by step. The roast looks soooo yummy and you set such a BEAUTIFUL table!!
    I hope little Kitty will get better fast, she looks sooo cute in the picture and I see that Doug is feeling better. Having family over is great isn't it!!! It does sound like you did have a very busy week!!!

  24. Awwww, I hope your kitty is feeling much better by now.
    YUM! Your photos and descriptions of your delicious dinner made my mouth water. I made a roast on saturday in the crockpot with veggies. So easy and so good on a rainy day. And the leftovers are yummy too.
